For FtA it can be explained that either during the expansion or the war a lot of races were wiped out, most of the surviving ones being humanoid...or something like that...

I'm not sure that makes sense. The odds of running into humans are slim. Evolution would probably take a lot of different courses in each space-faring species. Even having so many humanoids in FtA is already rather nonsensical.
