  • I dunno about some of you, but I love to cook. I thought it'd be nice if there were a place we could discuss and trade recipes. To start it off, I'll share the recipe for my favorite sandwich. It's a recipe from the TV show Leverage (I'm a big fan). Some awesome people out there managed to recreate it. In the show, the ingredients were listed but no measurements were revealed.

    Elliot Spencer's Unforgettable Sandwich



    Ingredients

    1 lb thinly sliced deli turkey
    1 sweet maui onion, sliced thin
    4 sliced dill havarti cheese
    1 heirloom tomato❄❄❄
    8 ounces cream cheese
    2 garlic cloves❄❄
    1 green onion, stalk (or chives)
    4 everything bagels❄❄❄❄
    ghee or olive oil

    Directions:

    1. Caramelize the onion in Ghee or Olive oil (about 30 minutes).
    2. Remove some of the dough from inside both sides of the bagel (optional). If you aren't using bagels, skip this step.
    3. Toast the Bagels/Bread.
    4. Mix the cream cheese, chives, and minced garlic together.
    5. Spread cream cheese mixture on both pieces of toasted Bagel/Bread.
    6. Place many layers of Sliced Turkey on top (1/4 lb total on each).
    7. Place Sliced Havarti on top of turkey.
    8. Place Sliced Tomato on top of Cheese.
    9. Top with caramelized onions.
    10. Place Bagel/Bread top on top.
    11. Wrap in Foil and place in pre-heated oven (400 degrees) for about 8-10 minutes.
    12. Serve and enjoy!

    Caramelizing onion brings out the flavor of the sugar within the onion (you heard me right) and it makes all the difference. Use whatever size pan you want, doesn't really matter. Cut the onion into slices or dice them (I prefer slices) and fry them in the oil. I have vegetable oil on hand so I used that.

    ❄❄ Garlic Paste works way better, but your average grocery store won't have it. You'll probably have to go to a Mediterranean store.

    ❄❄❄ Any tomato will do. I couldn't get my hands on an heirloom tomato.

    ❄❄❄❄❄ Sweet Maui onions are really hard to come by outside of Hawaii, in fact you won't find it in your standard grocery store ever. It's considered the best onion in the world and can only be grown in Maui. It is quite the delicacy. You could probably have some shipped to you but it will be pricey. I used Vidalia instead.
