Title: Post a Picture of Food You Make
Post by: Wintermoot on June 10, 2018, 10:00:40 PM
Sometimes I make food, it works out, and I want to show off how proud I am of my accomplishment...and I think maybe others might want to do that too. :D

These are some potato wedges that I made! New potatoes cut into wedges, shredded Parmesan cheese, garlic powder and salt, and some parsley after it came out of the oven. I could have baked them a bit longer to crisp the outside more, but the flavour was fantastic, and went great with ranch dressing as a dip. It won approval in my house, at least. :D

My take at raspberry fool, based on a recipe on Food Network and the ingredients that I happened to have. I actually decided to totally mix in the raspberries and cream to give it a uniform flavour. I'm not usually a big fan of raspberries, but it was good with ladyfingers. :D

I also made this with strawberries yesterday, and it's very much my thing. :)

I wouldn't drink raspberry juice but raspberries are delicious. Looks good! Even if it does look like the food paste from Fallout 4. :P

This is currently one of my favourite dinners. Bobotie: a mince dish, with copious amounts of fruit, curry powder, and milk-soaked bread. I have to start making it at a bit past one for it to be serveable by six, and the egg layer on top keeps consistently being runny, but I'm getting there!

So yesterday for my birthday, my wife and I watched the Maple Films fan edit (http://www.maple-films.com/jrr-tolkiens-the-hobbit) of The Hobbit as well as the Lord of the Rings trilogy. To accompany the movie marathon, we picked some recipes from a Lord of the Rings-themed cookbook and made a Hobbit's feast! My favorite was the mushrooms on toast -- it was fucking delicious. We were so full by the end -- need to pace ourselves better next year and eat smaller portions at the start.

First Breakfast
Gravy-poached eggs and coffee

Second Breakfast
Blueberry scones, strawberries, custard cream, and tea

Elevensies
Mushrooms on toast, watercress soup, and apple cider

Luncheon
Field pastries (stew beef/bacon and apples/raisins/honey), ploughman's platter, and beer
(https://i.imgur.com/iixtSxz.png)
Tea
Finger sandwiches (cucumber/cheese and lemon curd/blueberries) and tea

Dinner
Roast chicken, roast taters, and apple cider

Supper

It's a wonder they got anything done apart from cooking and eating! :P

Seriously though, it all looks wonderful! And as an aside, I'm excited that apple cider is coming into season...one of the things I love about autumn. :)

Oh that simply looks beautiful.

I also approve of the choice of Maple Films' J.R.R. Tolkien's The Hobbit edit. :)

I've had some noodles sitting in the back of my cabinet in the kitchen for like a year or two and finally did something with it because my brother doesn't like pasta that is without meat. So I made some buttered noodles since it's easy to make and filling. There's a lot of recipes but I just used what I had laying around. So I salted the water, brought it to a boil and cooked the noodles, strained it, put it back in the pan, added butter, sour cream, parsley, parmesan cheese and basil. From there I melted the butter and sour cream. Then I mixed it up until the sauce covered all the noodles. It's very good!

Here are some brownies I made a few days ago:

Spoiler

This is my family's take on a standard brownie recipe. It's basically the same except it has significantly (3x, and it's semi-sweet vs. unsweetened :D) more chocolate in it. They're extremely rich, and sooooo good. Small portions are absolutely necessary with this. :P They are very good frozen as well.

And we melt the chocolate with butter in a make-shift double-boiler: (The conversation in the SWOYM thread was what inspired me to make them again)

Made a mess, though. :P

Nice! We made some brownies today too, but we just take the package with the stuff already in it, add some peanut butter, bake, then put some nuts on top. Nothing worth posting on here.

Ah, very cool. My family does the opposite: we tend to go for chocolate but less sugar content.

How many layers of lasagna you got there? Three or four, maybe five? Gotta pump those numbers up! Those are rookie numbers!

But really, looks great. :D

Post by: Gerrick on June 17, 2020, 05:55:21 PM
Alright, I'm liking what I'm seeing!

Tip: if you put a little less sauce in between each layer and use a slightly smaller baking dish, then you can fit more layers, and more layers means more goodness. And if you really wanna go pro, try to make your own lasagne noodles so that you can make them reeeally thin and get up to 10 layers (although you'd need to invest in a pasta maker to get it uniformly thin -- speaking of which, I'm gonna need to buy one soon to make a lasagna after seeing all your pics).

But man, 2 lasagnas in 2 weeks? That's my kind of eating! :))

I'm no good at taking pictures... T_T
Used spaghetti squash, San Marzano tomatoes (Praise the Mater!), onion, basil, and oregano from the farm where I work as well as ground pork sausage from another farm I traded with at the farmers' market. Was good.

@Kolya, are you willing to share the recipe on that second lasagna?

So first, the layering (from bottom to top): sauce, plate, sauce, plate, sauce, bechamel, plate, sauce, bechamel, cheese, and repeat the last four steps as necessary.

The Bechamel sauce is just that; butter, milk (or milk substitute) and flour. Make sure to cook it long enough, as otherwise it'll taste of flour.

The sauce is just minced meat with tomatoes; you can use cut ones or passata. It's not "traditional" (I asked my Italian friend) to add things like rosemary, thyme, whatever, but I just love them too much to miss out on them. Also, obviously, garlic, salt, the usual.

Add: Almost forgot! Of course I give the meat a nice hot time with some onion friends in olive oil

Oooh, you used bechamel sauce instead of the traditional ricotta cheese layer. Have you done a lasagna with and without a bechamel sauce so you can tell me which one is better. I've been planning on changing my recipe by adding bechamel but I wanted a reference before doing it.

Hmm? I first made this with my Italian friend and they said this is the way her grandmother does it, soo? Maybe it's a geographical thing (she's from Sardinia).
Either way, the bechamel version is definitely yummy and I can't get Ricotta here...

I used to buy my ricotta but during quarantine I couldn't anymore so I actually found a cool recipe to make your own ricotta. Its really simple, about 7 cups of milk, cook it until it is boiled, then add like 1/3 cup of any acid (I used lemon juice), stir it for a few minutes, and then strain it into a cheese clothe. It tasted just as good as store bought.

I think ricotta in lasagna is an American thing because my Italian grandmother's recipe also uses bechamel and not ricotta.

As is tradition in my household for my birthday (well... for the past three years), we watched the Lord of the Rings trilogy and cooked up some food to eat along with it. We ended up only having a day rather than two, so the menu got cut down a lot last minute. Photos courtesy of my wife (so the quality is her fault).
